Hydraulic Pastry Block Press: How Polvoron Gets Its Shape

Polvoron is a classic Filipino crumbly pastry. Most of it is still pressed by hand in small molds, which keeps daily output low and quality uneven. With Southeast Asian snacks selling more abroad, hydraulic pastry block presses have become a common way to take polvoron from small workshop batches to real production volume.

The mix is a dry powder-toasted flour, milk powder, sugar and butter. It doesn't stick together much on its own. What holds the cake together is fat and sugar under pressure. That makes pressing force the thing that matters most. Press too lightly and the polvoron stays fragile, with a lot of breakage in shipping. Press too hard and it turns dense and hard, losing the crumbly texture people expect from polvoron.

Block Pressing Machine

A hydraulic pastry press uses a hydraulic cylinder to deliver steady, adjustable pressure. That lets you match the pressure to different powder recipes and keep block density consistent. The machine has a sliding mold tray. The operator fills the molds with mixed powder, pushes the tray under the pressing head, the cylinder compresses the powder, then the tray is pulled out and the finished polvoron taken off.

All parts that touch the powder are 304 food-grade stainless steel, so the machine meets food hygiene standards and export inspection requirements.

The same dry-powder forming method also works for mung bean cake, peanut cake, grain meal-replacement blocks and other compressed powder products. Change the mold and you can run different items-handy for food factories with several SKUs.

Compared with other forming machines, hydraulic powder pressing needs no extra binders and keeps the original flavor of the raw materials. For food exporters, that's a practical advantage.
